Hot dog mummies

Hot dog mummies are the kind of snack kids cheer for and adults secretly grab two of. You wrap hot dog sausages in strips of puff pastry, bake them golden in the oven and add two little eyes with a bit of mustard or ketchup. That's your spooky snack ready. Make sure you have a good oven mitt on hand, because the baking sheet comes out hot. This recipe is quick, needs little technique and always goes down well. Ideal for Halloween, a kids' party or just a weeknight Friday when you fancy something tasty.

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Oven mitt
  • Rolling pin
  • Sharp knife or pizza cutter
  • Kitchen paper
  • Pastry brush

Ingredients

  • 8 hot dog sausages
  • 2 sheets of puff pastry (or 1 ready-rolled sheet, approx. 230 g)
  • 1 egg, beaten
  • 2 tbsp mustard (for the eyes)
  • 1 tsp flour (for dusting the work surface)

How do you make hot dog mummies?

    1. Preheat the oven to 200°C (conventional oven). Line a baking sheet with parchment paper.
    2. Roll out the puff pastry on a lightly floured work surface and cut it into strips about 1 cm wide. Strips that are too wide won’t cook through as well and the mummy effect will be lost, so keep them narrow.
    3. Pat the hot dog sausages dry with kitchen paper. Moisture on the surface prevents the puff pastry from rising properly and keeps it sticky instead of crisp.
    4. Wrap each pastry strip diagonally around a sausage, overlapping like a real mummy. Leave a small opening at the top for the eyes. Press the ends of the strip lightly so they don't come loose during baking.
    5. Place the mummies on the baking sheet and brush the pastry lightly with beaten egg. This gives a nice golden shine. Brush only the dough, not the sausage itself.
    6. Bake the mummies 15 to 18 minutes in the preheated oven until the puff pastry is golden brown and crisp. Check after 15 minutes: every oven is a little different, and puff pastry burns quickly if left too long.
    7. Remove the baking sheet from the oven with your oven mitt. Let the mummies rest for 3 minutes on the baking sheet so the pastry firms up and you don't burn yourself.
    8. Use a toothpick or a small piping bag to dot two small spots of mustard or ketchup in the open gap as eyes. Serve immediately, because puff pastry is at its best when still crisp.

Crisp puff pastry starts with two things: a well-preheated oven and dry sausages. Moisture is the enemy of a good rise, so always pat dry. If you're using chilled supermarket puff pastry, let it sit briefly at room temperature so it rolls out smoothly without tearing. Cut the strips with a sharp knife or a pizza cutter, because a dull knife compresses the layers of the pastry and you'll see less volume after baking. Always let the mummies rest a moment after baking before you touch them; the filling retains heat for a long time.

There are plenty of variations. Use cocktail sausages instead of hot dogs for smaller bites that are easier to eat at a party. Veggie version? Use vegetarian sausages, they work fine in this recipe. For extra flavor you can lightly spread mustard or sprinkle a pinch of smoked paprika on the puff pastry before rolling. Store leftover mummies covered in the fridge and reheat them the next day for 5 minutes in a 180°C oven to get the pastry crisp again. A microwave makes puff pastry soggy, so best skip that.
