Gourmet vegetables from the Raclette Grill plate

Gepubliceerd op

Vegetables belong at gourmet dining just as much as meat. On the grill plate and in the little pans, bell pepper, zucchini, mushrooms and onion become delightfully sweet and lightly roasted. A quick marinade of olive oil, garlic and rosemary gives them even more flavour, and a splash of balsamic after cooking finishes them perfectly. In this recipe you'll read which gourmet vegetables work best, how to cut them and how much you need for 4 persons.

Equipment

  • Raclette Grill with grill plate
  • Cutting board
  • Mixing bowl
  • Small bowls

Ingredients

  • 2 bell peppers (red and yellow), in strips
  • 1 zucchini, in 1 cm slices
  • 250 g mushrooms, halved
  • 2 red onions, in wedges
  • 1 eggplant, in 1 cm slices
  • 125 g green asparagus, halved
  • 4 tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp balsamic vinegar

Prepare

  1. Wash and cut all the vegetables into pieces of roughly equal thickness so they cook at the same time.
  2. Mix the olive oil with the garlic, rosemary, salt and pepper.
  3. Toss the vegetables in the marinade and let sit for at least 10 minutes.
  4. Place the vegetables by type in small bowls on the table.
  5. Cook the vegetables on the grill plate of the Raclette Grill: bell pepper, onion and eggplant 6 to 8 minutes, zucchini, mushrooms and asparagus 4 to 5 minutes. Turn them halfway through.
  6. Drizzle the grilled vegetables with a few drops of balsamic and eat immediately.

Which vegetables are suitable for gourmet dining? Choose vegetables that cook quickly and don't release too much moisture. Bell pepper, zucchini, mushrooms, red onion, eggplant, green asparagus, cherry tomatoes and baby corn work best. Also nice are slices of sweet potato and pre-cooked baby potatoes, which become crispy on the plate. Hard vegetables like carrot and broccoli are better blanched for 2 minutes first. Plan on about 150 to 200 grams of vegetables per person.

Tips: don't cut the vegetables too thin, otherwise they burn or fall through the grill plate. A thickness of one centimetre is ideal. Cook meat and vegetables on different parts of the plate so the vegetables don't absorb meat juices; handy if vegetarians are eating along. Vegetables are also delicious in the little pans with a slice of cheese on top. Nice with garlic sauce or tzatziki. Also check out our recipes for vegetarian raclette and gourmet side dishes.
