Gourmet platter: assemble yourself

Gepubliceerd op

Assembling a gourmet platter yourself is tastier, fresher and often cheaper than a ready-made tray from the supermarket. You choose the meats you like, cut everything into bite-sized pieces and give each its own marinade. In this recipe you’ll read how much meat you need per person, which types work best on the grill plate and in the little pans, and what else you need for a gourmet evening. Includes a shopping list for 4 persons.

Equipment

  • Raclette Grill
  • Cutting board
  • Sharp knife
  • Mixing bowls
  • Large platter

Ingredients

  • 250 g beef steak (round steak)
  • 250 g chicken breast
  • 200 g pork tenderloin
  • 4 bacon-wrapped mince rolls
  • 200 g mixed minced meat (for mini burgers)
  • 8 cocktail sausages
  • 3 tbsp olive oil
  • 1 tbsp ketjap manis (sweet soy sauce)
  • 1 tsp chicken seasoning
  • 1 tsp steak or grill seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Prepare

  1. Slice the steak into 1 cm-thick slices and sprinkle with steak seasoning and a little olive oil.
  2. Cut the chicken breast into strips and mix with chicken seasoning, ketjap manis (sweet soy sauce) and 1 tbsp olive oil.
  3. Cut the pork tenderloin into 1.5 cm medallions and season with salt and pepper.
  4. Mix the minced meat with salt and pepper, roll into 8 balls and flatten them into mini burgers.
  5. Halve the bacon-wrapped mince rolls and arrange all the meat and sausages by type on a large platter. Cover and refrigerate until ready to use.
  6. Take the platter out of the fridge 15 minutes before you start tabletop grilling and place it on the table with sides and sauces.

How much gourmet meat per person? Plan on 200 to 250 grams of meat, fish or vegetarian substitutes per adult. For children 100 to 150 grams is enough. If you serve many sides, like baguette, salads and baby potatoes, you can go to the lower end of that range. Choose a mix of tender meats that cook quickly, such as steak, chicken breast and pork tenderloin, and a few firm favourites like bacon-wrapped rolls, sausages and mini burgers. Slice everything thinly so it cooks quickly and evenly.

What do you need to gourmet? A Raclette Grill or table grill with little pans and spatulas, the meat platter, vegetables for the grill plate such as bell pepper, mushrooms and onion, baguette with herb butter, a salad, boiled baby potatoes and a few sauces. Have eggs, lardons and grated cheese ready for the pans. Also check our recipes for gourmet vegetables, gourmet side dishes and five homemade gourmet sauces. Always use separate plates and forks for raw and cooked meat.
