Gluten-free Speculaas Chunks

It was, of course, inevitable: a recipe for gluten-free speculaas chunks. As Sinterklaas approaches, or really already in September, the shops are full again of all sorts of treats. By now there are recipes online for most treats, e.g. marzipan, filled speculaas, gluten-free pepernoten, chocolate pepernoten, taai taai, etc. And most of them are free from refined sugars, so you can get through the holidays more or less responsibly.

Gluten-free Speculaas Chunks

Are you just as crazy about all things speculaas? With these speculaas chunks you can sneak a little more snacking without immediately feeling guilty. The chunks are free from refined sugars.

Preparation time

Preparation time 15 min
Stiffen up min. 2 hours
Cooling time 2 hours
Total 2 hours, 25 min

Equipment

  • Mixing bowl
  • Small bowl
  • Rolling pin
  • Aluminium foil
  • Baking paper

Ingredients

  • 150 grams rice flour
  • 150 grams almond flour (or use 300 grams self-raising gluten-free flour)
  • 50 grams coconut blossom sugar
  • 160 grams coconut oil
  • 25 grams speculaas spice mix
  • 1 teaspoon vanilla extract
  • 75 ml almond milk
  • 1 teaspoon cinnamon
  • 1 teaspoon cream of tartar (baking powder)
  • a handful of flaked almonds or blanched almonds

Gluten-free Speculaas Chunks

    1. Preheat the oven to 175°C
    2. In a large bowl, mix the rice flour with the almond flour, coconut blossom sugar, speculaas spice mix, cinnamon and cream of tartar (baking powder).
    3. In a separate small bowl, melt the coconut oil. Add it to the dry ingredients along with the vanilla extract and almond milk. Knead the dough briefly. Wrap the dough in aluminium foil and let it rest in the refrigerator for at least 2 hours.
    4. Roll the dough out with a rolling pin to about 1–2 cm thick. Spread the almonds over the dough and press them in lightly.
    5. Bake for 15 minutes until nicely crisp in the oven (175°C) on baking paper. Let cool completely; only then will the speculaas harden. Break into pieces and store airtight at room temperature.
    6. Serve on a pretty serving platter at the table. Super tasty and super cozy around Sinterklaas and Christmas

These gluten-free speculaas chunks are also dairy-free (vegan) and contain no refined sugar. Instead of coconut blossom sugar you can optionally finely chop dates and use them as a sweetener. Is the dough a bit dry? Then add a little extra almond milk. Or add a bit more flour if the dough stays too wet. Especially if you use different types of flour, you need to feel whether the amount of liquid is right.

Speculaas chunks are secretly a bit of a guilty pleasure of mine. Anyway, I'm a sucker for all Sinterklaas treats; I actually care much more about them than about popular Christmas recipes. Delicious!
