Equipment

  • Food processor
  • Baking sheet
  • Parchment paper or baking mat
  • Oven

Ingredients

  • 50 grams gluten-free oats
  • 80 grams pitted Medjool dates
  • 40 grams desiccated coconut
  • 60 grams almonds
  • 50 grams coconut oil
  • 1 egg
  • 1 tablespoon crushed flaxseed
  • juice of a small orange

Gluten-free Oatmeal Cookies

    1. Preheat the oven to 170°C
    2. Put the oats, dates, desiccated coconut and almonds into a food processor and blend until finely ground.
    3. Then add the egg, orange juice and coconut oil. Mix until a dough forms and knead it by hand. The dough will be a bit oily.
    4. Line a baking sheet with parchment paper and shape cookies about 1–2 cm thick.
    5. Bake for 20 minutes until golden brown.

These gluten-free oatmeal cookies are a delicious and healthy treat. The combination of Medjool dates and orange juice provides natural sweetness, while the almonds and desiccated coconut add a pleasant crunch.

Store the cookies in a sealed container and they will stay fresh for a few days. You can also freeze them so you'll always have one on hand when you fancy a treat.
