Fried rice is one of those dishes everyone loves and that you can get on the table in no time. The secret is well-cooked rice as the base. For that, use a rice cooker and your rice will always be perfectly cooked without you having to watch it. Then quickly fry it in a hot wok with egg, vegetables and a splash of soy sauce. Your meal is ready.

Fried rice with egg and crunchy vegetables: a classic dish that's always easy when you use a rice cooker. Perfect for weeknights or when you want to surprise friends.

  • Wok or large frying pan
  • Cutting board
  • Sharp knife

Ingredients

  • 300 g jasmine rice (or long-grain rice)
  • 3 eggs
  • 1 carrot
  • 1 red bell pepper
  • 3 spring onions
  • 2 cloves garlic
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp sunflower oil
  • Salt and pepper to taste

How to make fried rice with egg and vegetables?

    1. Cook the rice in the rice cooker using a ratio of 1 part rice to 1.5 parts water. The rice cooker will automatically switch to the keep-warm setting when the rice is done. Then let the rice steam for 10 minutes with the lid on.
    2. Cut the carrot, bell pepper and spring onions into small pieces. Finely chop the garlic.
    3. Heat a splash of sunflower oil in a large wok or frying pan over high heat. Add the garlic and fry for 30 seconds until fragrant.
    4. Add the carrot and bell pepper and stir-fry for 3 minutes over high heat. The vegetables should still have a bit of bite.
    5. Push the vegetables to the edge of the wok. Crack the eggs into the center and scramble them quickly until just set. Then mix everything together.
    6. Add the cooked rice and stir-fry everything for 3 to 4 minutes over high heat. Keep stirring so the rice stays loose and becomes a little crispy.
    7. Finish with soy sauce and sesame oil. Taste and add extra soy sauce if needed. Sprinkle the spring onions over the top and serve immediately.

A rice cooker makes this recipe child's play. While you chop the vegetables, the rice cooker does its job without you having to watch. No burnt bottom, no undercooked rice. Just perfectly cooked rice, ready for the wok.

Want to make the dish more substantial? Add fried prawns, chicken or tofu for extra protein. And have leftover rice? Fried rice tastes just as good the next day. Just reheat it in the wok with a small splash of oil and you have a quick lunch ready.
