  • Large mixing bowl
  • Small mixing bowl
  • Whisk
  • Frying pan
  • Tablespoon or ice cream scoop
  • Spatula

Ingredients

  • 150 g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • Pinch of salt
  • 1 egg
  • 150 ml whole milk
  • 2 tbsp melted butter, plus extra for the pan
  • 150 g fresh berries (blueberries, raspberries or strawberries)
  • 2 tbsp honey

How to make fluffy pancakes with fresh berries and honey?

    1. Put the flour, baking powder, sugar and salt in a large bowl and give them a quick mix.
    2. In a separate bowl, whisk the egg together with the milk and the melted butter.
    3. Pour the wet mixture into the dry ingredients and stir gently until you have a smooth batter. Don't overmix — a few lumps are fine and actually help keep them airy.
    4. Heat a frying pan over medium heat and lightly grease it with butter or a neutral oil.
    5. Spoon a generous tablespoon of batter into the pan for each pancake. Cook them for 2 to 3 minutes until bubbles appear on the surface and the edges look set.
    6. Carefully flip the pancakes and cook for another 1 to 2 minutes until golden brown.
    7. Stack the pancakes on a plate and scatter the fresh berries on top. Finish with a generous drizzle of honey and serve immediately.

The key to fluffy pancakes is a good pan that distributes heat evenly. A heavy frying pan with a thick base ensures your pancakes brown evenly without burned spots. You'll notice the difference right away in the result.

Switch the berries to whatever's in season or mash in a ripe banana for extra sweetness. This recipe is also easy to double if you have a table full of hungry people. Enjoy.
