  • 100 g pointed cabbage or Chinese cabbage, finely sliced
  • 1 clove garlic, grated
  • 1 tsp fresh ginger, grated

How to make crispy air fryer gyoza with soy dip?

    1. Mix the minced pork, finely chopped cabbage, grated ginger, garlic, sesame oil, soy sauce and spring onion well together in a bowl. Taste the filling and add a pinch of salt if needed.
    2. Place a gyoza wrapper flat on your work surface. Spoon a small teaspoon of filling into the center. Moisten the edge of the wrapper lightly with water and fold the wrapper in half. Press the edges firmly and make small pleats along the rim so they’re well sealed. Repeat for all wrappers.
    3. Preheat the air fryer to 190 degrees Celsius for 3 minutes.
    4. Brush the gyoza lightly with a thin layer of neutral oil or use an oil spray. Place them in a single layer in the air fryer basket, making sure they don’t overlap.
    5. Cook the gyoza for 10 to 12 minutes at 190 degrees Celsius, until they are golden brown and crispy. Shake the basket halfway through so they cook evenly.
    6. Meanwhile make the dip: stir together the soy sauce, rice vinegar, sesame oil and the finely chopped red chili. Add a pinch of sugar and stir until dissolved.
    7. Serve the gyoza straight from the air fryer with the soy dip on the side and, if desired, sprinkle with extra spring onion and sesame seeds.

The air fryer is truly the smart choice here. You get exactly that crispy bite that makes gyoza so delicious, without having to keep a pan full of oil on the stove. Especially when cooking for a group, this is a real solution: multiple batches go quickly and the result is evenly golden brown each time. Prepare the gyoza in advance and air-fry them at the last moment so they arrive at the table crunchy.

Want to vary? Swap the minced pork for minced chicken or make a completely vegetarian filling of finely chopped shiitake, tofu and cabbage. The technique stays exactly the same and the result is just as tasty. Serve with a cold Asian salad or a bowl of miso soup and you have a complete and quick dinner on the table.
