Cook the pasta in plenty of water until al dente.
Halve the avocado, scoop out the flesh and put it in the food processor or mash it finely.
Add the basil, the juice of half a lemon, the grated cheese, Italian seasoning and salt and pepper, then let the machine run until a smooth, creamy mixture forms.
Now add the olive oil in a steady stream until the sauce reaches the desired thickness. You'll need about 3 tbsp.
Finally add the pine nuts and pulse the machine briefly so the nuts are incorporated but still a little whole.
Wash the peppers and cut them into very thin strips.
Sauté the prawns in a frying pan with a splash of oil. By now the pasta should be cooked. Drain it and add the avocado mixture.
Stir the peppers through as well and taste to see if it needs more Italian seasoning or salt and pepper.
Spoon the pasta onto plates and place the prawns on top.
Finish with a few basil leaves and some cheese, if you like.

This dish is a delicious way to serve spelt pasta. The creamy avocado sauce provides a fresh, silky base, while the garlic prawns and colorful peppers complete the dish. Serve immediately after preparation, as the avocado sauce tastes best when fresh.
Prefer a different pasta? That's fine. Whole wheat pasta or regular spaghetti also work well in this recipe. Add a little extra grated cheese and a few fresh basil leaves at the end for a beautiful presentation.
