Tortilla chips, a generous layer of melted cheese, spicy jalapeños and creamy sour cream: simple ingredients that become something celebratory together. Equipment

  • Roasting pan or baking dish
  • Mixing bowl
  • Cutting board
  • Sharp knife
  • Spoon

Ingredients

  • 200 g plain tortilla chips
  • 150 g grated cheddar
  • 1 can kidney beans (400 g), drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 50 g pickled jalapeños (from jar)
  • 1 ripe tomato
  • 1/2 red onion
  • 1 tbsp lime juice
  • 10 g fresh cilantro, roughly chopped
  • 100 g sour cream
  • 1 avocado, sliced

How to make loaded nachos in the oven?

    1. Preheat the oven to 200°C (conventional oven). A hot oven makes the cheese melt quickly and evenly without drying out the chips.
    2. Mix the kidney beans with the cumin, chili powder, salt and a splash of olive oil in a bowl. Stir well so every bean is coated in the spices.
    3. Spread half of the tortilla chips in an even layer across the bottom of the roasting pan or baking dish. Let the chips overlap slightly, but avoid thick piles—otherwise the bottom chips will go soggy.
    4. Scatter half of the grated cheddar over the chips, followed by half of the seasoned beans and half of the jalapeños. Repeat with the remaining chips, cheese, beans and jalapeños. Two layers give a well-filled, gooey nacho.
    5. Slide the roasting pan into the preheated oven and bake for 10 to 12 minutes, until the cheese is fully melted and slightly golden at the edges. Keep an eye on the oven: cheddar can go from melted to burnt quickly.
    6. Meanwhile, finely chop the tomato and red onion. Toss them in a small bowl with the lime juice, salt and fresh cilantro. This fresh salsa is ready in the time the nachos are in the oven.
    7. Remove the nachos from the oven and immediately spoon the sour cream and tomato salsa over the top. Add avocado slices if you like. Serve right away—nachos are best when the cheese is still soft and the chips are still crispy.

The key to great nachos is a roasting pan or baking dish that distributes heat evenly. If you use a thin baking sheet you'll get hot spots: burnt edges and lukewarm middle. Never pile the chips too thickly. Two thin layers work better than one thick stack. Want extra-crispy chips? Turn the oven to the grill setting for the last two minutes. Watch the oven closely. Always add sour cream and fresh toppings after baking so they stay fresh and the chips don't go soggy.

Want to vary it? Swap the kidney beans for black beans or add cooked minced meat for a meaty version. No cheddar on hand? Grated Gouda or a Mexican cheese blend works fine. For a milder version, leave out the jalapeños and use a scoop of mild jarred salsa. Nachos don't keep well: the chips soften quickly. Only make as much as you'll eat immediately. If you want to prep ahead, you can season the beans and make the salsa. Do the rest right before serving.
