Budget recipe: Homemade kapsalon

The kapsalon originally comes from Rotterdam and is now a Dutch street food classic. At home you can make it just as delicious, and a lot cheaper than at the takeaway. It's all about the layers: warm fries as a base, then chicken shawarma, a thick layer of grated cheese you briefly melt under the grill, and finishing with cool lettuce with garlic sauce and sambal. Serve this nicely on dinner plates so everyone gets their own portion and it looks great straight away.

Equipment

  • Frying pan
  • Oven
  • Baking tray
  • Ovenproof plates or a baking dish
  • Garlic press
  • Mixing bowl
  • Cutting board
  • Chef's knife

Ingredients

  • 600 g chicken breast
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp turmeric
  • Black pepper and salt to taste
  • 2 tbsp sunflower oil
  • 800 g frozen fries
  • 150 g grated Gouda cheese
  • 1/2 iceberg lettuce
  • 150 g mayonnaise
  • 3 garlic cloves
  • 1 tbsp lemon juice
  • 3 tbsp sambal oelek

How do you make a homemade kapsalon?

    1. Cut the chicken breast into thin strips. In a bowl, mix the chicken with ground cumin, paprika, garlic powder, turmeric, black pepper, salt and a splash of sunflower oil. Stir well so each piece is coated with the spices.
    2. Preheat the oven to 220°C (fan) and bake the frozen fries according to the package instructions for 18 to 20 minutes until crispy and golden. Spread the fries in a single layer on the baking tray — if they overlap they will steam instead of becoming crispy.
    3. Heat a frying pan over medium-high heat. Fry the seasoned chicken for about 8 minutes until golden and cooked through. Stir regularly so the pieces don't burn but do get a nice color. Remove the pan from the heat and keep the chicken warm.
    4. Meanwhile make the garlic sauce: mix the mayonnaise with the crushed garlic cloves, the lemon juice and a pinch of salt. Stir well and taste to adjust spiciness or strength. Set aside.
    5. Slice the iceberg lettuce into thin strips and wash well. Shake dry so the sauce will cling. Toss the lettuce with a few tablespoons of garlic sauce just before serving.
    6. Switch the oven to the grill (broil) setting at 230°C. Divide the hot fries over ovenproof plates or a baking dish. Spread the cooked chicken shawarma evenly over them and sprinkle the grated Gouda cheese generously over the chicken.
    7. Place the plates or dish under the grill for 3 to 5 minutes until the cheese is fully melted and lightly golden. Watch closely, as cheese burns quickly under a hot grill.
    8. Take the plates out of the oven and immediately add a generous layer of dressed lettuce over the melted cheese. The lettuce stays cool and fresh — that contrast with the warm fries and cheese is exactly what makes a kapsalon so tasty.
    9. Drizzle extra garlic sauce over the lettuce and add sambal to taste. Serve immediately, because the kapsalon is best when the fries are still crispy and the cheese still warm.

Want the chicken even tastier? Let it marinate in the spices for 30 minutes before cooking so the flavors penetrate better. For an extra authentic note, add a teaspoon of freshly grated ginger to the marinade. Make sure the fries are in a single layer on the baking tray and not too crowded, otherwise they steam instead of crisping. Serve immediately because cheese that sits too long draws moisture and makes the fries soft. Only dress the lettuce at the last moment so it stays crisp.

You can easily swap the chicken for lamb strips or a vegetarian version with spiced chickpeas. If you don't have sambal, use harissa or regular chili sauce. Want a lighter garlic sauce? Replace half the mayonnaise with Greek yogurt. Store leftovers separately: fries and chicken in an airtight container in the fridge, lettuce separately so it doesn't go limp. Reheat in the oven at 200°C — never in the microwave, as the fries become rubbery. Add the cheese and lettuce again after reheating.
